CARROT, CELERY ROOT AND YAM MASH POTATOES

CARROT, CELERY ROOT AND YAM MASH POTATOES.   

INGREDIENTS:

1  YAM about a pound or less.
1  Celery root a pound or less.
5  Medium Carrots. 
2  Tablespoons butter (optional) 
3 Tablespoons milk or half and half.  (Optional.)

METHOD OF PREPARATION:

FIRST: PEEL AND CLEAN ALL.

SECOND:  CUT ALL INTO CUBES OF EQUAL SIZE.

THIRD:  PLACE IN A STEAMER BASKET AND STEAM.
Carefully remove a big piece and cut and taste for doneness.  If not done return to steamer basket.  

FOURTH:  Put all in Bowl with butter and cream and mash mash mash.  

Easy, fast and healthy and flavorful and make a wonderful side to any meat dish.

CHOCOLATE DRINK

CHOCOLATE DRINK

PROCEEDED WITH CAUTION:   If you are a hard core chocolate drinker do not read any further.  You might start to cry, because were talking healthy.  But to save your sanity scroll down until you see the evil version.

Note: There are times to be healthy and believe me there are times to splurge.  When I want an evil cup of deadliness I don't hold back.  But the key is not to do it all the time.

And please keep in mind you can change this up any way you would like.  Make it your own.  I'm just trying to keep the calories down and still get the chocolate tastes.

At the bottom is the evil version of chocolate milk hot or cold.

NOTE:  All you have to do is chill the hot chocolate to get a cold drink. It's that easy.

INGREDIENTS:

2 Table spoons of Coco Powder.
1 Table spoon of Sugar
4 Table spoons of water. 

Heat water and sugar to boil add coco powder and turn off burner stir. Add a bit more water if need.   Cool mixture.  Next add about two table spoons worth of mixture to a glass, add ice and more water and stir.  If the mixture is not chocolaty enough for you try adding another table spoon of chocolate of adding less water.  It took me a while to find the right mixture.  But in the long run it is worth it and your getting the chocolaty fix and drinking your water to boot.


EVIL VERSION:

HOT OR COLD  CHOCOLATE:
1 cup of whole milk
1 cup of heavy whipping cream.
2  Tablespoons of good quality chocolate powder.
Tiny Marsh mellows.
3 Three Table spoons sugar.
1 Teaspoon of cinnamon.
1/2  Teaspoon of Vanilla extract.  Home made is the best.
Add a peppermint stick for garnish.
Put the both milks into a pot on the stove on High. Add vanilla, chocolate powder, sugar and cinnamon.   Stir it with a whisk,  it will take some time.  Watch for little bubbles around the edges of the milk, when they start to foam and roll.  As soon as you start to see it boil a little turn it off.
Yummy
If their is left overs put in the refrigerator and cover. Then you'll have cold chocolate milk for late.

YAM PANCAKES

YAM PANCAKES    

Very healthy and fully of flavor.   This recipe is made with water, but if you feel you need to make the pancakes with milk go ahead.  My hubby and I do a lot of cycling and were trying to cut calories and well water, has no calories.   Either with milk or water it's yummy.

INGREDIENTS:
1 lb of yams peeled.
2 cups of flour.
1 teaspoon of baking soda.
1 teaspoon of cinnamon
1 teaspoon of nutmeg
1 egg
1 table of Sugar, or condensed milk your choice.
Water

METHOD OF PREPARATION:

FIRST: STEAM THE YAMS.
In a double boiler or a steamer basket steam your yams.  After they are done and you can easily stick a knife though them and they are no longer tender, put all into a bowl and mash them.  They should mass up really easily. If you notice that when you start to smash them their not smashing very easily, return them to the steamer basket and steam for a minute or two.

SECOND:ADD & MIXING AWAY.
The consistency of the batter should look like watery porridge.
Add the egg to the cooled mixture and mix in, then add the spices, baking soda keep mixing and add the sugar or condensed milk.   Now stir in a 1/2 of cup of the flour at a time.   Now were not making a dough, but rather a batter.  And also keep in mind if the batter becomes to thick add more water and if the batter become to watery add more flour.  Now that every thing is mixed really good add the water a 1/2 a cup at a time and stir in really good.  Then another 1/2 cups.

Testing the batter consistency;  Get a pan out and scoop a table spoon into the pan.  The batter should hold it's shape and not run all over the pan. It should spread out a little, but not take over the whole bottom of the pan.

THIRD: COOKING
Make sure you spray your pan with non stick oil and turn the stove top to low to med-low.  If you on low and it's taking forever turn to med-low. Note: This is only for if the pan has heated up for a while and it is still not cooking.
In the heated frying pan add about a tablespoon and a half of batter.  With the spoon press the batter in a circle and spread it out a little.  Bubbles should appear in the batter and the sides of the pancake should start looking dry.   With a metal spatula lift the pancake up and flip it over and gently press it down.   As it cooks the middle of the pancake should start to swell from cooking this is normal.   Cook until both sides are golden.     These are really good just by them selves, but again make them your own by adding raisins nuts and other yummy things.
