BASIC: HOW TO COOK SPINACH.

 Spinach is so healthy and you can add it to anything. Their are no rules here, if you want spinach in your meal toss a handful in.... that's it.   And it really easy to cook down.  Believe me you can't go wrong with having spinach as a side dish.  
There are no cups or times here all you have to do is watch what you are cooking.  
I put a bunch of spinach in a large pan and added two table spoons of olive oil.  ( If you use less as half the olive oil) 
Turn the burner to Medium High and stir, a leaf or two might fall out, just add them back in.   
As you stir it the leaves will start to wilt down.



 Wilt down a lot.   When your spinach looks like this turn the burner down to medium low and keep stirring.  
Notice how you can see the leaves still, keep stirring and cooking until you can't see each individual leaf.







This is what cooked spinach looks like.  I spread is out, in the above picture it's piled up a bit.   The spinach should have a nice even green color with not light uncooked leaves showing.

This is great for a fast meal, with potatoes and sausage.

200 BLOG'S POSTED!!!!! BASIC: HOW TO PAN ROAST GARLIC WITH A SIDE OF POBLANO.

Cool beans 200 recipes.

This is easy, and you can add roasted garlic to any meal.  And you don't have to use the who thing.  Pick out how ever many you want to roast.  And I threw the poblano in their for dinner.  So this is a 2 in 1 blog.  :)  You can substitute the poblano for any sweet bells or any hot pepper.   With hot pepper you eye might sting so be careful.

First acquire on whole garlic clove.    

Second smash and peel of the shafe off.  I got a really nice clove all the garlic was nice and big, their were no small bit's.   

Tip: Save all the very small and tiny garlics and put then in a dish. The next time you make soup throw them all in.  :)
Remove as much of the skin as you can, but don't remove the skin off the cloves them selves. 
Drizzle with olive oil, about a table spoon 1/2. 
With any pepper you use slice them in the same manner.     Turn the burner to medium high.  Were going to caramelize both the garlic and peppers.

Very improtant to remember.
ONE : Olive oil has a low smoking point, so even though were starting out at medium high, were going to want to turn it down to medium low.  Or if you feel things are getting out of hand take it off the burner all together and start again.  
TWO:  By putting a lid on it, the lid will create condensation which will cause the hot olive oil to spit and spatter.  If you have a screen use it.    Or just be extra careful and turn the burner down.    It's ok for it to spit and spatter a bit. 
On the garlic your looking for dark areas almost like it's dirty.   The poblano is going to look really mess up.  Burnt and very dark with green patches.  This is what we want.   When the garlic is done the poblano is done. 






Pinch on of the garlic with the prong, and use a fork to squish the cooked garlic out.   I have mastered the pinch with the prongs so I can just squeeze it out.












I put it all in the little blender and mix it into the hamburger meat.  Yummy.

WILD RICE COUSCOUS & ORANGE BLOSSOM HONEY SALAD WITH FRUIT AND NUTS.

 INGREDIENTS:
1/2 cup of couscous
1 cup of boiling water
3/4 cup wild rice. 
3 cups of water (for while rice)
1/2 cup golden raisens
1/2 cup walnuts
1/2 slivered almonds
2 Table spoons of Orange Blossom honey.
1 teaspoon cinnamon
1/2 teaspoon turmeric.
1 Red bell pepper.
1 apple
Sesame seeds for topping.  

First tame your wild rice.  :)

Put you wild rice in a pot with 3 cups of water, bring to a steady boil than turn down to low.   Wild rice cook very
 differently from other rices it does not soak up all the water, so when it is done you'll have to strain off the water.  Let the rice simmer on low for 20 minutes.    Wild rice has a extremely nutty texture.  While that is cooking get your couscous ready.

Put 1/2 cup of couscous in a glass dish and pour exactly 1 cup of boiling water over it and let it rest for 20 minutes to absorb all the water.

 Get out your fixings. 

 Put all in a pot with spices and honey.  Turn the burner to Medium high.  We are not cooking we are coating. Were heating up the honey so we can coat every thing evenly and mixing in the spice.








So when it looks like this it is done.  Take it off the burner.








Take your apple and red bell and  slice them then dice them like shown in the picture.  
 Mix the wild rice and couscous together.
 Add the nut's, apple and bell pepper. 
 Mix in. 
 Yum!    We had this for dinner and it was 100% satisfying and very filling.   It's nice not to have a meat dish.      And this is very healthy.
